The underground part of Maitake is a tubular structure similar to potato. The top hat clusters can be up to 60 cm in diameter and consist of a large number of fan-shaped or spoon-shaped taupe short handles, each having a diameter of 2 to 7 cm. On the surface of the fungal tube below each lid, there are approximately 2 to 3 nozzles per mm, typically no less than 3 mm. The milky white or light yellow stem has a fork shape, and the surface of the handle becomes rough when mature.
Maitake is rich in minerals such as zinc, potassium, calcium and manganese, multivitamins (B2, D2 and niacin), cellulose and various amino acids. In the 1980s, it was discovered that the main active ingredient of Maitake is the protein-linked polysaccharide compound β-glucan.
